E1420
Acetylated starch
What this grade is
Acetylated with acetic anhydride. Acetyl groups keep the chains from re-associating, so less water is expelled and the texture stays smooth in storage. Gelatinisation temperature also drops. It is not cross-linked, so it does not match E1422 under severe shear or strong acid.
What it solves
Syneresis and graininess in chilled storage
The need to cook at a lower temperature
Cloudiness where the formulation must stay clear
Common applications
Confectionery fillings and creams
Ready meals with gentle processing
General thickening in chilled products
Technical data
The technical data sheet for this grade is published after production and batch testing. Until then we publish no figures here; a number with no test behind it comes back at the customer’s first audit. If you already have the range you need, send it to us.
